Hamburger-Vegetable Chowder

Ingredients

  • 1 lb. lean ground beef
  • 2 medium carrots, diced
  • 2 tsp. salt
  • 1/3 c. rice (regular long grain)
  • 3 Tbsp. butter or oil
  • 1/2 c. diced celery
  • 1/4 tsp. pepper
  • 2 c. canned tomatoes (one 14 oz. can with juice)
  • 1 medium onion, chopped
  • 1 1/2 qt. water

Instructions

  1. Brown hamburger in oil over medium heat.
  2. Add all ingredients except rice to the pot.
  3. Cook on low for 1 hour.
  4. Add rice and cook until rice is done.
  5. Adjust thickness with additional water or tomato juice if needed.
  6. Optional: substitute V-8 juice for water or tomato juice.
  7. Serve hot and enjoy.
