Ingredients

  • 4 eggs
  • 1 1/4 cups sugar
  • 1 cup oil
  • 2 teaspoons vanilla extract
  • 3 teaspoons baking powder
  • 5 1/2 cups flour
  • 1/2 teaspoon salt
  • pineapple

Instructions

  1. Mix eggs, sugar, oil, and vanilla together.
  2. Mix baking powder, flour, and salt; add to egg mixture.
  3. Refrigerate the mixture overnight.
  4. On a lightly floured surface, cut out circles 4 inches in diameter and 1/4 inch thick.
  5. Pinch together the edges to form a three-cornered hat shape.
  6. Fill with pineapple, cherry, poppy seed, prune, or jelly.
  7. Bake on a greased cookie sheet at 350°F until lightly browned.
  8. Allow to cool completely and dust with powdered sugar if desired.
