Ingredients

  • 4 cups diced fresh apples
  • 2 cups sugar
  • 3 cups flour
  • 1 cup cooking oil
  • 2 eggs
  • 1 cup chopped nuts
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 cup raisins

Instructions

  1. Mix apples and sugar and let stand for 1 hour.
  2. Sift together the flour, soda, spices, and salt.
  3. Beat eggs; add oil and vanilla. Add the apple mixture.
  4. Add the flour and spice mixture to the wet ingredients.
  5. Mix until well blended.
  6. Stir in nuts.
  7. Add raisins, if desired.
  8. Pour batter into a greased and floured tube pan.
  9. Bake at 350°F for 1 hour or until a toothpick inserted comes out clean.
