Ingredients

  • 2 1/2 cups sifted all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 cup canned pumpkin
  • 1 1/4 cups firmly packed brown sugar
  • 1 1/2 cups Wheat Chex cereal, crushed to 3/4 cup
  • 3/4 cup dark raisins, coarsely chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan.
  2. Sift together flour, baking powder, salt, baking soda, cinnamon, and nutmeg.
  3. Combine eggs, milk, vegetable oil, pumpkin, and brown sugar in a bowl. Stir in crushed cereal and chopped raisins.
  4. Add dry ingredients all at once to the wet mixture. Stir just until moistened.
  5. Pour batter into prepared loaf pan.
  6. Bake for 50 to 60 minutes or until a tester inserted in the center comes out clean.
  7. Let cool for 15 minutes before removing from the pan.
