- 2 1/2 cups sifted all-purpose flour ⓘ

- 1/4 teaspoon nutmeg ⓘ
- 2 eggs, beaten ⓘ
- 1/2 cup milk ⓘ
- 1/4 cup vegetable oil ⓘ
- 1 cup canned pumpkin ⓘ
- 1 1/4 cups firmly packed brown sugar ⓘ
- 1 1/2 cups Wheat Chex cereal, crushed to 3/4 cup ⓘ
- 3/4 cup dark raisins, coarsely chopped ⓘ
Instructions
- Preheat oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan.
- Sift together flour, baking powder, salt, baking soda, cinnamon, and nutmeg.
- Combine eggs, milk, vegetable oil, pumpkin, and brown sugar in a bowl. Stir in crushed cereal and chopped raisins.
- Add dry ingredients all at once to the wet mixture. Stir just until moistened.
- Pour batter into prepared loaf pan.
- Bake for 50 to 60 minutes or until a tester inserted in the center comes out clean.
- Let cool for 15 minutes before removing from the pan.
