Ingredients

  • 1/4 cup butter or margarine
  • 1 cup onion, chopped
  • 3/4 cup water
  • 1 envelope brown gravy mix
  • 3 cups cooked beef, chopped
  • 24 ounces frozen hash brown potatoes
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • paprika

Instructions

  1. Place butter in a 1 1/2-quart casserole.
  2. Cook on high for 1 minute.
  3. Stir in chopped onion.
  4. Cover with wax paper.
  5. Cook on high for 5 minutes, stirring once.
  6. Combine water and gravy mix in a 2-cup glass measure.
  7. Cook on high for 2 to 3 minutes, stirring at 1-minute intervals.
  8. Combine cooked beef and frozen hash brown potatoes in a large mixing bowl.
  9. Add the sautéed onion, gravy mixture, salt, and pepper; blend well.
  10. Spread the mixture in a 12 x 8-inch glass dish.
  11. Sprinkle with paprika.
  12. Cover with wax paper and cook on high for 14 to 16 minutes.
  13. Rotate the dish 1/2 turn after 7 to 8 minutes.
  14. Let stand, covered, for 2 to 3 minutes before serving.
