White Hot Chili
A hearty, spicy chili packed with tender meats, fiery peppers, and rich tomato flavors, perfect for those who love bold, warming dishes with a smoky kick.
Ingredients
- 1 1/2 lb. round steak, cubed ⓘ
- 1 1/2 lb. pork, cubed
- 1 1/2 lb. kielbasi, sliced ⓘ
- 3 Tbsp. olive oil ⓘ
- 2 large Spanish onions, diced ⓘ
- 2 large purple onions, diced
- 3 large bell peppers, diced ⓘ
- 3 stalks celery, diced ⓘ
- 1/2 c. minced shallots ⓘ
- 3 cloves minced garlic
- 6 Habanero chilies, minced
- 4 jalapeno peppers, minced ⓘ
- 2 (28 oz.) cans crushed tomatoes ⓘ
- 1 (28 oz.) can tomato puree
- 1 (20 oz.) can tomato sauce ⓘ
- 1 (8 oz.) can tomato paste ⓘ
- 1/4 c. Port wine
- 12 oz. flat beer ⓘ
- 3/4 c. chili powder ⓘ
- 1/4 c. cumin ⓘ
- 2 Tbsp. hot pepper oil ⓘ
- 2 Tbsp. crushed red pepper
- 2 Tbsp. cayenne pepper ⓘ
- salt to taste ⓘ
Instructions
- In a 12-quart pot, sear the cubed round steak and pork in 3 tablespoons of olive oil.
- Add diced Spanish onions, purple onions, bell peppers, and celery to the pot.
- Cook over high heat until vegetables are tender.
- During cooking, add the Port wine to the mixture.
- Once tender, add the crushed tomatoes, tomato puree, tomato sauce, and tomato paste.
- Bring the mixture to a boil.
- Add minced shallots, minced garlic, minced Habanero chilies, minced jalapeno peppers, and the flat beer.
- Stir until all ingredients are well blended.
- Add chili powder, cumin, hot pepper oil, crushed red pepper, and cayenne pepper to the pot.
- Reduce heat to low, cover, and cook for 2 hours, stirring occasionally.
- Add sliced kielbasa and simmer uncovered for an additional 2 hours.
- Serve hot, garnished with diced purple onions and grated Cheddar cheese.
