Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 cup mashed ripe bananas
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 20-ounce can crushed pineapple, undrained
  • 1 cup flaked coconut

Instructions

  1. Beat butter until light and fluffy.
  2. Gradually beat in sugar until light.
  3. Add eggs and beat well.
  4. Stir in mashed bananas.
  5. Combine flour, baking powder, and baking soda.
  6. Add the flour mixture to the butter mixture.
  7. Mix until smooth.
  8. Fold in crushed pineapple and flaked coconut.
  9. Spoon batter into 2 greased and floured 9x5 inch loaf pans.
  10. Bake in a preheated 350-degree Fahrenheit oven until a toothpick inserted in the center comes out clean, about 60-70 minutes.
