Ingredients

  • 1 egg white
  • 2 Tbsp applesauce
  • 2 Tbsp oil
  • 1/2 c nonfat milk
  • 1 1/2 c flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 c sugar
  • 2 c grated apples and carrots

Instructions

  1. Whip the egg white; add applesauce, oil, and nonfat milk.
  2. Mix with a fork until well combined.
  3. In a separate bowl, mix all the powdered ingredients: flour, baking powder, cinnamon, and salt.
  4. Add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated apples and carrots.
  6. Pour the batter into muffin tins and bake at 400°F for 25 to 30 minutes.
