Ingredients

  • 1 1/2 c. diced carrots
  • 1/2 c. diced onions
  • 1 c. diced green pepper
  • 1 c. diced celery
  • 1 tsp. salt
  • 1 c. water
  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. vinegar
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 20 oz. can pineapple
  • 1 (8 oz.) can water chestnuts

Instructions

  1. Combine diced carrots, onions, green pepper, and celery in a saucepan.
  2. Cook until tender, about 20 minutes.
  3. Drain well and set aside.
  4. In a separate saucepan, combine salt, water, sugar, brown sugar, cornstarch, vinegar, cinnamon, and cloves with the juice from the can of pineapple.
  5. Cook until the mixture thickens.
  6. Add drained and sliced water chestnuts and pineapple chunks to the sauce.
  7. Add the sauce to the cooked vegetables and heat through.
