  • 1 1/2 tsp. curry powder

  • butter lettuce leaves
  • 1 c. cracker wheat
  • 1/2 c. green onion, sliced

Instructions

  1. Pour juice from the fruit can into a measuring cup.
  2. Mix in curry powder.
  3. Add enough water to make 2 cups of liquid.
  4. Bring the liquid to a boil.
  5. Pour the boiling liquid over the cracked wheat in a bowl; let stand for 30 minutes while the liquid soaks in and the wheat cools.
  6. Mix the fruit, tuna, cucumber, and green onion together.
  7. Chill the mixture.
  8. Serve on butter lettuce leaves.
