Crab Newenburg

Ingredients
- 1/4 small onion, minced ⓘ
- 1 Tbsp. green pepper, dry ⓘ
- 1 Tbsp. celery, dry ⓘ
- 5 Tbsp. butter ⓘ
- 1 Tbsp. parsley ⓘ
- 1/4 tsp. garlic powder ⓘ
- 1 tsp. chives ⓘ
- 1/4 tsp. dry mustard ⓘ
- 1/4 tsp. ginger (optional) ⓘ
- 1/4 tsp. cinnamon (optional)
- 3 Tbsp. flour ⓘ
- 1 can condensed milk ⓘ
- 1/2 cup water ⓘ
- 3 cups crab ⓘ
- 4 hard-boiled eggs, minced ⓘ
- 1 tsp. paprika ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. pepper ⓘ
- 1 small can mushrooms (optional)
Instructions
- Saute onion, green pepper, celery, butter, parsley, garlic powder, chives, dry mustard, ginger, and cinnamon in a 3-quart saucepan.
- Add flour, condensed milk, water, crab, eggs, paprika, salt, pepper, and mushrooms to the sauteed mixture.
- Cook for 10 minutes or until bubbly.
- Add soda cracker crumbs.
- Turn the mixture into a buttered rectangle baking dish.
- Bake at 350°F for 15 to 25 minutes.
