Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup applesauce
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 4 egg whites
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 2 cups flour
  • Walnuts (optional)

Instructions

  1. With an electric mixer, fork, or potato masher, mash the ripe bananas in a bowl and add applesauce.
  2. In a separate bowl, combine flour, baking soda, baking powder, and cinnamon.
  3. Add the dry ingredients to the banana mixture and stir until just combined.
  4. If using walnuts or raisins, mix them in with the oil before adding to the batter.
  5. Pour the batter into a greased loaf pan.
  6. Bake at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
