Healthy Stroganoff

A healthy, creamy beef stroganoff with tender lean beef, mushrooms, and yogurt, perfect for a comforting yet light meal suited for family dinners or casual gatherings.

Ingredients

  • 1 lb. top round lean beef
  • 3 c. uncooked noodles
  • 2 c. sliced fresh mushrooms
  • 1 tsp. margarine
  • 1/2 c. white wine
  • 1/2 c. water
  • 1/2 tsp. instant beef bouillon granules
  • 1 Tbsp. flour
  • 1 tsp. sugar
  • pepper to taste
  • 8 oz. plain low-fat yogurt
  • 2 Tbsp. chopped parsley (optional)

Instructions

  1. Put water on to boil separately for the noodles.
  2. Slice the lean beef into thin strips.
  3. Melt the margarine in a skillet or wok.
  4. Coat the skillet using a pastry brush with margarine.
  5. Brown half of the beef strips in the skillet for 3 to 4 minutes, then set aside in a bowl.
  6. Saute the sliced fresh mushrooms in the same skillet until tender.
  7. Set the mushrooms aside with the beef strips.
  8. Add the white wine, water, and beef bouillon granules to the skillet.
  9. Bring the mixture to a boil and simmer gently for 3 minutes.
  10. Cook the noodles according to package instructions until al dente.
  11. Return the beef and mushrooms to the skillet and stir to combine.
  12. Mix in the flour, sugar, and pepper, then cook until the sauce thickens.
  13. Remove from heat and stir in the plain low-fat yogurt.
  14. Serve the stroganoff over cooked noodles, garnished with chopped parsley if desired.
