Healthy Stroganoff
A healthy, creamy beef stroganoff with tender lean beef, mushrooms, and yogurt, perfect for a comforting yet light meal suited for family dinners or casual gatherings.

- Put water on to boil separately for the noodles.
- Slice the lean beef into thin strips.
- Melt the margarine in a skillet or wok.
- Coat the skillet using a pastry brush with margarine.
- Brown half of the beef strips in the skillet for 3 to 4 minutes, then set aside in a bowl.
- Saute the sliced fresh mushrooms in the same skillet until tender.
- Set the mushrooms aside with the beef strips.
- Add the white wine, water, and beef bouillon granules to the skillet.
- Bring the mixture to a boil and simmer gently for 3 minutes.
- Cook the noodles according to package instructions until al dente.
- Return the beef and mushrooms to the skillet and stir to combine.
- Mix in the flour, sugar, and pepper, then cook until the sauce thickens.
- Remove from heat and stir in the plain low-fat yogurt.
- Serve the stroganoff over cooked noodles, garnished with chopped parsley if desired.
