Ingredients

  • 1 cup sliced onion
  • 2 cups diced raw potatoes
  • 1 (15 oz.) can kidney beans, drained
  • 1/4 cup uncooked rice
  • 1 cup sliced celery
  • 1 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon Worcestershire sauce
  • 1 (15 oz.) can tomato sauce
  • 1/8 teaspoon pepper
  • 1/2 cup water

Instructions

  1. Arrange sliced onion, diced raw potatoes, drained kidney beans, uncooked rice, and sliced celery in layers in a covered casserole sprayed with Pam.
  2. Preheat oven to 325°F (163°C).
  3. Mix salt, chili powder, Worcestershire sauce, pepper, and tomato sauce well and pour over the layered ingredients in the casserole.
  4. Cover and simmer in the oven for 1 1/4 hours or until the potatoes are tender.
  5. Check occasionally to ensure it does not boil dry, but do not stir.
