Ingredients

  • 3 c. water
  • 3 chicken bouillon cubes
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, sliced
  • 1 c. thinly sliced carrots
  • 1/2 c. diced green pepper
  • 1/3 c. margarine
  • 1/2 c. flour
  • 3 1/2 c. milk
  • 4 c. shredded sharp Cheddar cheese
  • 1 (2 oz.) jar pimiento, drained
  • 1/4 tsp. hot sauce

Instructions

  1. Combine water and bouillon cubes in a pot, bring to a boil, then add vegetables, cover, and simmer until tender.
  2. In a heavy saucepan, melt margarine, then blend in flour and cook for 1 minute.
  3. Gradually add milk while stirring constantly, cooking until thickened.
  4. Add shredded cheese, stirring until melted.
  5. Stir cheese sauce, pimiento, and hot sauce into the vegetable mixture.
  6. Cook over low heat until thoroughly heated, but do not let it boil.
