Ingredients

  • 1/4 cup black-eyed peas
  • 1/4 cup butter beans or large limas
  • 1/4 cup pinto beans
  • 1/4 cup navy beans
  • 1/4 cup pearl barley
  • 1/4 cup split green peas
  • 1/4 cup small lima beans
  • 1/4 cup red beans
  • Juice of 1 lemon
  • 1/4 cup Great Northern beans
  • 1/4 cup lentils
  • 1 large onion
  • 20 oz canned tomatoes
  • 1 pod red pepper or 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Wash all beans thoroughly.
  2. Place beans in a large container.
  3. Cover with water and add 2 tablespoons salt.
  4. Soak overnight.
  5. In the morning, drain the beans.
  6. Add 2 quarts of water and about 1/2 pound ham or ham hocks.
  7. Bring to a boil, stirring occasionally.
  8. Simmer for 2 to 2 1/2 hours.
  9. Add chopped onion, canned tomatoes, chili powder or red pepper, lemon juice, salt and pepper.
  10. Simmer for another 30 minutes.
  11. Serve hot with French bread, crackers, a green salad, or relish plate.
