Hearty Lentil Kiebasa Soup Recipe

Ingredients

  • 3 1/2 quart. water
  • 1 bag lentils, rinsed
  • 3 or possibly 4 carrots, sliced
  • 4 stalks celery, minced
  • 2 onions, minced
  • 3/4 pound Kielbasa, sliced thin
  • 1 (10 ounce.) pkg. spinach, minced
  • 1 tbsp. garlic pwdr
  • 2 teaspoon thyme
  • Salt & pepper to taste (will taste bland without)

Instructions

  1. Put all the ingredients in an 8 qt pot and simmer for 2 to 3 hrs.
  2. NOTE: Soup becomes thicker if refrigerated overnight, so make it a day ahead.
