Instructions

  1. With hands, lightly shape the ground chuck into 1-inch meatballs.
  2. In a 6-quart pan, melt the butter over medium heat.
  3. Saute the meatballs, turning until browned all over.
  4. Drain off the fat.
  5. Add tomatoes, consomme, dry onion soup mix, carrots, celery tops, parsley, bay leaf, oregano, basil, salt, peppercorns, okra, and water to the pan.
  6. Bring the mixture just to boiling.
  7. Reduce heat, cover, and simmer for 45 minutes, stirring occasionally to break up the tomatoes.
  8. Serve very hot. The soup is better the second day.
