Hearty salmon fillets topped with a flavorful medley of onions, mushrooms, peppers, and herbs, perfect for a satisfying and nutritious meal for seafood lovers.

Ingredients

  • 2 lb. salmon fillets
  • 2/3 c. thinly sliced onions
  • 1 1/2 c. chopped mushrooms
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped parsley
  • 3 Tbsp. chopped pimento
  • 1/2 c. dry white wine
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/4 tsp. dill weed
  • 1/8 tsp. pepper
  • lemon wedges

Instructions

  1. Arrange sliced onions in the bottom of a greased 12-inch pan.
  2. Place salmon fillets on top of the onions.
  3. Combine chopped mushrooms, green pepper, parsley, and chopped pimento, then spread over the top of the fish.
  4. Pour dry white wine and lemon juice over the ingredients.
  5. Sprinkle with salt, dill weed, and pepper.
  6. Bake until the salmon is cooked through, and serve with lemon wedges.
