Ingredients

  • 3 cups cubed rye bread
  • 1 cup water
  • 3 eggs
  • 1 pound corned beef, sliced and chopped
  • 1 teaspoon caraway seed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces shredded Swiss cheese
  • 16 ounces sauerkraut, well drained
  • 1 cup Thousand Island or Russian dressing

Instructions

  1. In a large bowl, mix together the cubed rye bread, water, eggs, chopped corned beef, caraway seed, salt, and pepper.
  2. Place half of the mixture in a large, nonstick-sprayed shallow casserole dish and spread evenly over the bottom.
  3. Spread the sauerkraut over the bread mixture.
  4. Spread the dressing over the sauerkraut.
  5. Top with the remaining bread mixture and sprinkle with shredded Swiss cheese.
  6. Bake at 350°F (175°C) for 35 to 45 minutes or until golden brown and set.
