Herbed rolled flounder features tender fillets wrapped with fresh herbs, simmered in savory broth, and complemented by a creamy yogurt-mustard sauce, perfect for a light, elegant meal.

Ingredients

  • 4 flounder fillets (5 oz. each)
  • 2 Tbsp. chopped parsley
  • 1 tsp. leaf tarragon, crumbled
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. reduced-sodium chicken broth
  • 2 Tbsp. low-fat plain yogurt
  • 1/2 tsp. Dijon style mustard

Instructions

  1. Lay the flounder fillets, smooth side down.
  2. Sprinkle each fillet with 1 tablespoon chopped parsley, crumbled tarragon, salt, and pepper.
  3. Roll up each fillet from the wide end and secure with a wooden pick.
  4. Bring the chicken broth to boiling in a skillet.
  5. Add the rolled fillets to the skillet.
  6. Simmer, covered, for 8 to 10 minutes until the fish flakes easily.
  7. Remove the fillets with a slotted spoon and transfer to a platter.
  8. Remove the skillet from heat.
  9. Whisk in the low-fat plain yogurt and Dijon mustard into the broth.
  10. Add the remaining parsley to the sauce.
  11. Spoon the sauce over the fish before serving.
