Ingredients

  • Pam
  • 2 large eggs
  • 1 cup evaporated milk
  • 1 cup plain yogurt
  • 8 oz feta cheese, crumbled
  • 1/3 lb Swiss cheese, shredded
  • 1/3 cup fresh parsley, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 4 cloves garlic, minced
  • 1/2 lb angel hair pasta, cooked
  • 1 jar milk chunky salsa (16 oz.)
  • 1 lb medium shrimp, peeled and uncooked

Instructions

  1. Preheat oven to 350°F. Coat the bottom and sides of an 8x12 inch baking dish with cooking spray.
  2. In a separate bowl, blend eggs, evaporated milk, yogurt, crumbled feta cheese, shredded Swiss cheese, chopped parsley, dried basil, dried oregano, and minced garlic.
  3. Spread half of the cooked angel hair pasta over the bottom of the prepared baking dish.
  4. Cover the pasta with the jar of chunky salsa.
  5. Add half of the uncooked peeled shrimp over the salsa.
  6. Spread the remaining pasta over the shrimp.
  7. Pour and spread the egg mixture evenly over the layered pasta.
  8. Add the remaining shrimp on top and sprinkle with shredded mozzarella cheese.
  9. Bake for 30 minutes, then remove from oven and let stand for 10 minutes before serving.
