Herbed Shrimp And Feta Casserole

- 1 cup evaporated milk ⓘ
- 1 cup plain yogurt ⓘ
- 8 oz feta cheese, crumbled ⓘ
- 1/3 lb Swiss cheese, shredded ⓘ
- 1/3 cup fresh parsley, chopped ⓘ
- 1 teaspoon dried basil ⓘ
- 1 teaspoon dried oregano
- 4 cloves garlic, minced ⓘ
- 1/2 lb angel hair pasta, cooked ⓘ
- 1 jar milk chunky salsa (16 oz.) ⓘ
- 1 lb medium shrimp, peeled and uncooked ⓘ
Instructions
- Preheat oven to 350°F. Coat the bottom and sides of an 8x12 inch baking dish with cooking spray.
- In a separate bowl, blend eggs, evaporated milk, yogurt, crumbled feta cheese, shredded Swiss cheese, chopped parsley, dried basil, dried oregano, and minced garlic.
- Spread half of the cooked angel hair pasta over the bottom of the prepared baking dish.
- Cover the pasta with the jar of chunky salsa.
- Add half of the uncooked peeled shrimp over the salsa.
- Spread the remaining pasta over the shrimp.
- Pour and spread the egg mixture evenly over the layered pasta.
- Add the remaining shrimp on top and sprinkle with shredded mozzarella cheese.
- Bake for 30 minutes, then remove from oven and let stand for 10 minutes before serving.
