Super Seafood Supper
A hearty seafood casserole combining tender shrimp, scallops, and sea legs with fresh vegetables and a creamy sauce, topped with crunchy bread crumbs. Perfect for seafood lovers and special occasions, this dish offers rich flavors and comforting textures in every bite.
Ingredients
- 1 1/2 lb. cooked, cleaned shrimp ⓘ
- 1/2 lb. sea legs
- 1/2 lb. scallops ⓘ
- 2 c. thinly sliced celery ⓘ
- 1 c. thinly sliced green pepper ⓘ
- 1 c. thinly sliced onion ⓘ
- 1/4 c. butter ⓘ
- 1/4 c. coarsely chopped pimento ⓘ
- 1 pt. sour cream ⓘ
- 1 c. light cream ⓘ
- 2 Tbsp. lemon juice ⓘ
- 2 tsp. Worcestershire sauce ⓘ
- 1/2 tsp. salt ⓘ
- dash of pepper ⓘ
- 1 qt. cooked rice ⓘ
- 2 (4 oz.) cans mushrooms ⓘ
Instructions
- Cook the celery, green pepper, and onion in butter until partially cooked.
- Combine these with seafood and chopped pimento.
- Mix sour cream, light cream, lemon juice, Worcestershire sauce, salt, and pepper in a small bowl.
- Combine 3/4 of the cream mixture with the rice and drained mushrooms.
- Spread the rice mixture evenly in a well-greased 15 x 9 x 2-inch baking dish.
- Place the seafood mixture on top of the rice mixture.
- Pour the remaining 1/4 cup of cream mixture over the seafood.
- Combine bread crumbs with remaining butter.
- Sprinkle the bread crumb mixture over the casserole.
- Bake at 350°F for 30 to 35 minutes.
