Ingredients

  • 1 1/2 lb. cooked, cleaned shrimp
  • 1/2 lb. sea legs
  • 1/2 lb. scallops
  • 2 c. thinly sliced celery
  • 1 c. thinly sliced green pepper
  • 1 c. thinly sliced onion
  • 1/4 c. butter
  • 1/4 c. coarsely chopped pimento
  • 1 pt. sour cream
  • 1 c. light cream
  • 2 Tbsp. lemon juice
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • dash of pepper
  • 1 qt. cooked rice
  • 2 (4 oz.) cans mushrooms

Instructions

  1. Cook the celery, green pepper, and onion in butter until partially cooked.
  2. Combine these with seafood and chopped pimento.
  3. Mix sour cream, light cream, lemon juice, Worcestershire sauce, salt, and pepper in a small bowl.
  4. Combine 3/4 of the cream mixture with the rice and drained mushrooms.
  5. Spread the rice mixture evenly in a well-greased 15 x 9 x 2-inch baking dish.
  6. Place the seafood mixture on top of the rice mixture.
  7. Pour the remaining 1/4 cup of cream mixture over the seafood.
  8. Combine bread crumbs with remaining butter.
  9. Sprinkle the bread crumb mixture over the casserole.
  10. Bake at 350°F for 30 to 35 minutes.
