Ingredients

  • 1/2 cup chopped onion
  • 2 tablespoons margarine
  • 1/3 cup all-purpose flour
  • 1/2 to 1 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 2 1/2 cups milk
  • 1 cup water
  • 3/4 cup cubed American cheese
  • 1 package (10 oz.) frozen chopped spinach, thawed and drained
  • oyster crackers (optional)

Instructions

  1. In a 3-quart saucepan, sauté chopped onion in margarine until tender.
  2. Stir in all-purpose flour, salt, and nutmeg until smooth.
  3. Gradually whisk in milk and water, stirring constantly.
  4. Add cubed American cheese; cook and stir over medium heat until melted.
  5. Add thawed and drained chopped spinach; cover and simmer for 4 to 5 minutes or until heated through.
  6. Serve hot, optionally garnished with oyster crackers.
