Ingredients

  • 1/4 cup butter or margarine
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons aniseed
  • 1/2 teaspoon fennel seed
  • 1 cup dried cranberries
  • 3/4 cup whole shelled pistachios
  • 1/2 cup dried apricots
  • Egg Wash (recipe follows)

Instructions

  1. Beat butter or margarine in a mixing bowl for 30 seconds.
  2. Add sugar, baking powder, baking soda, and 1/4 teaspoon salt; beat until combined.
  3. Beat in eggs, vanilla, and almond extract.
  4. Gradually beat in as much of the flour as you can with the mixer.
  5. Stir in remaining flour, aniseed, fennel seed, cranberries, pistachios, and apricots.
  6. Turn mixture out onto a lightly floured board.
  7. Cover and refrigerate for several hours or until easy to handle.
