A vibrant, creamy vegetable salad featuring diced zucchini, cauliflower, carrots, green beans, and lima beans, perfect for light lunches or as a refreshing side dish.

Ingredients

  • 1 zucchini or 1 cup broccoli, diced
  • 1/2 head cauliflower, diced
  • 1 carrot, diced
  • 1/2 pound green beans
  • 1 can or package canned or frozen baby lima beans
  • 1 can chopped pimientos
  • 1/2 onion, diced
  • 4 tablespoons mayonnaise
  • salt to taste
  • pepper to taste
  • nutmeg to taste

Instructions

  1. Combine all the vegetables in a large bowl.
  2. Mix in 4 tablespoons mayonnaise, salt, pepper, and nutmeg to taste.
  3. Add more mayonnaise if a creamier texture is desired.
  4. Chill the salad in the refrigerator.
  5. Serve on a lettuce bed topped with chopped hard-boiled eggs.
