Ingredients

  • 8 oz. cream cheese
  • 1 cup Parkay margarine
  • 1.5 cups sugar
  • 1.5 teaspoons vanilla
  • 4 eggs
  • 2.25 cups sifted cake flour
  • 1.5 teaspoons baking powder
  • 0.75 cups chopped maraschino cherries
  • 0.5 cups chopped pecans
  • 1.5 cups sifted confectioners sugar
  • 2 tablespoons milk

Instructions

  1. Combine softened cream cheese, margarine, sugar, and vanilla, mixing until well blended.
  2. Add eggs, one at a time, mixing well after each addition.
  3. Gradually add 2 cups of sifted cake flour with baking powder, mixing well after each addition.
  4. Toss remaining flour with chopped maraschino cherries and chopped pecans; fold into batter.
  5. Pour batter into greased and floured loaf pans.
  6. Bake in a 325°F oven for 60 to 80 minutes.
  7. Cool for 5 minutes; remove from pans.
  8. Cool thoroughly.
  9. Mix confectioners sugar and milk to make glaze.
  10. Glaze warm loaves with the icing.
