Ingredients

  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon grated orange rind
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 2/3 cup orange juice
  • 1/2 cup chopped pecans
  • 1 tablespoon baking powder
  • 3 eggs
  • 1/2 cup milk
  • 1 cup blueberries
  • 1/2 cup melted butter

Instructions

  1. Sift the flour, baking soda, baking powder, and salt together in a bowl.
  2. Beat the eggs in a separate large bowl.
  3. Add melted butter, orange juice, milk, and grated orange rind to the eggs and mix well.
  4. Pour the liquid mixture into the dry ingredients and stir only until just moistened.
  5. Carefully fold in the chopped pecans and blueberries.
  6. Pour the batter into a buttered and floured 5 x 9-inch loaf pan.
  7. Bake at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread set for 10 minutes before removing from the pan.
  9. Cool on a wire rack.
  10. Wrap and refrigerate overnight before slicing.
