Ingredients

  • 2 medium onions, chopped
  • 3 to 4 carrots, chopped
  • 3 ribs celery, chopped
  • 8 medium potatoes, cut into chunks with skin on
  • salt
  • pepper
  • 2 bay leaves
  • 1 teaspoon sweet basil
  • 1 1/2 cups dry milk (nonfat)
  • 1 stick (1/2 cup) butter
  • parsley

Instructions

  1. Cut potatoes into chunks with skin left on; add to 1/2 gallon boiling water with 2 tablespoons salt.
  2. Saute in butter the carrots, celery, onions, bay leaves, and basil until vegetables are tender.
  3. Add the sauteed vegetables to the boiling potatoes and stir in 1 tablespoon pepper.

Tips & Substitutions

For a creamier texture, consider blending a portion of the soup before serving. You can substitute fresh herbs for dried; use one tablespoon of fresh basil instead of one teaspoon dried. If you want to add protein, consider including some cooked bacon or ham. This recipe can easily be adjusted for vegetarian recipes by using vegetable broth instead of water.

Serving Suggestions

Serve the soup hot, garnished with fresh parsley for a pop of color. It pairs beautifully with a side of crusty bread or a simple green salad. For a heartier meal, consider serving it alongside Macaroni Casserole Deluxe for a comforting combination.

Storage & Reheating

Store leftover potato soup in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over low heat, adding a splash of water or milk to restore creaminess. Avoid boiling it to prevent curdling of the milk.
