Ingredients

  • 1 1/2 cups finely diced celery
  • 1 large onion, diced fine
  • 1/2 medium green pepper, chopped fine
  • 1/4 cup butter
  • 1 1/2 packets instant chicken broth mix
  • 4 1/2 cups cooked hominy grits
  • 3 slices whole wheat bread, cubed
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon poultry seasoning
  • 1/8 teaspoon white pepper

Instructions

  1. In a heavy skillet, melt the butter.
  2. Add the diced celery, onion, green pepper, and broth mix; stir and cook until the onion is transparent.
  3. Transfer the cooked mixture to a greased 2 1/2-quart casserole.
  4. Add the cooked hominy grits, cubed bread, chicken broth, salt, garlic powder, poultry seasoning, and white pepper; stir well to combine.
  5. Bake at 450°F for 30 minutes or until the top is golden.
