- Heat oven to 350°F (175°C).
- Mix flour, brown sugar, baking powder, and salt in a bowl.
- In a separate bowl, beat egg slightly, then stir in milk, honey, and melted margarine.
- Add the wet ingredients to the dry ingredients and stir just until moistened.
- Stir in bran flakes and chopped dried apricots.
- Pour batter into an 8 x 4-inch loaf pan sprayed with nonstick cooking spray.
- Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes, then remove from the pan.
- Cool completely on a wire rack before slicing.
