Ingredients

  • 1 1/2 cups flour
  • 2/3 cup firmly packed brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup skim milk
  • 1/4 cup honey
  • 2 tablespoons margarine
  • 1 cup bran flakes
  • 1 cup dried apricots

Instructions

  1. Heat oven to 350°F (175°C).
  2. Mix flour, brown sugar, baking powder, and salt in a bowl.
  3. In a separate bowl, beat egg slightly, then stir in milk, honey, and melted margarine.
  4. Add the wet ingredients to the dry ingredients and stir just until moistened.
  5. Stir in bran flakes and chopped dried apricots.
  6. Pour batter into an 8 x 4-inch loaf pan sprayed with nonstick cooking spray.
  7. Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 10 minutes, then remove from the pan.
  9. Cool completely on a wire rack before slicing.
