Honey-Spice Ring

Ingredients
- 1 1/2 cups raisins ⓘ
- 2 cups grated apples ⓘ
- 1 1/2 cups water, boiling ⓘ
- 1 cup honey ⓘ
- 1 teaspoon salt ⓘ
- 1 1/2 teaspoons cinnamon ⓘ
- 1 teaspoon allspice ⓘ
- 1/2 teaspoon nutmeg ⓘ
- 1/4 teaspoon cloves ⓘ
- 1/4 cup oil ⓘ
- 2 1/2 cups whole wheat flour ⓘ
- 1/2 cup wheat germ ⓘ
- 1 1/2 teaspoons baking soda ⓘ
- 1 cup chopped walnuts ⓘ
Instructions
- Combine raisins, grated apples, and boiling water in a bowl. Let stand for 10 minutes.
- Mix in honey, salt, cinnamon, allspice, nutmeg, cloves, and oil; set aside.
- In a separate bowl, combine flour, wheat germ, baking soda, and chopped walnuts.
- Add the dry ingredients to the apple mixture and mix well.
- Pour the batter into a well-greased angel cake pan ring.
- Bake for 1 hour at 325°F (163°C).
- Serve plain or topped with powdered sugar.
