Ingredients

  • 1 1/2 cups raisins
  • 2 cups grated apples
  • 1 1/2 cups water, boiling
  • 1 cup honey
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 cup oil
  • 2 1/2 cups whole wheat flour
  • 1/2 cup wheat germ
  • 1 1/2 teaspoons baking soda
  • 1 cup chopped walnuts

Instructions

  1. Combine raisins, grated apples, and boiling water in a bowl. Let stand for 10 minutes.
  2. Mix in honey, salt, cinnamon, allspice, nutmeg, cloves, and oil; set aside.
  3. In a separate bowl, combine flour, wheat germ, baking soda, and chopped walnuts.
  4. Add the dry ingredients to the apple mixture and mix well.
  5. Pour the batter into a well-greased angel cake pan ring.
  6. Bake for 1 hour at 325°F (163°C).
  7. Serve plain or topped with powdered sugar.
