Ingredients

  • 2 cups cooked rice
  • 1 cup chicken, cut up
  • 4 hard-boiled eggs, chopped
  • 1 small onion, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon salt
  • 1 1/2 cups chopped celery
  • 1 cup pecans or almonds
  • 1 cup mayonnaise
  • 1 cup mushroom soup
  • 1 package cheese
  • potato chips

Instructions

  1. Mix together cooked rice, chicken, chopped hard-boiled eggs, chopped onion, lemon juice, salt, chopped celery, pecans or almonds, mayonnaise, and mushroom soup.
  2. Refrigerate the mixture overnight.
  3. Remove from the refrigerator one hour before baking.
  4. Grate cheese over the top of the mixture.
  5. Cover with potato chips.
  6. Bake at 350°F (175°C) for 40 minutes to 1 hour until heated through and golden.
