Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 3 eggs
  • 1 c. chopped nuts
  • 1 small can crushed pineapple
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 tsp. vanilla
  • 1 1/2 c. cooking oil
  • 2 c. chopped bananas

Instructions

  1. Sift all dry ingredients, including spices, together in a large bowl.
  2. Add the beaten eggs, chopped nuts, crushed pineapple, vanilla, cooking oil, and chopped bananas to the dry ingredients.
  3. Mix well until all ingredients are combined; do not beat.
  4. Pour the batter into a greased tube, Bundt, or loaf pan.
  5. Bake at 350°F (175°C) for 1 hour, or until a toothpick inserted in the center comes out clean.
