Ingredients

  • 3 qt. cabbage
  • 1 large green pepper
  • 4 medium green onions
  • 1 small can pimentos
  • 3 carrots, shredded
  • 1 pt. vinegar
  • 2 1/2 c. sugar
  • 1 tsp. salt
  • 1 1/2 tsp. mustard
  • 1/2 tsp. turmeric
  • 1/2 tsp. celery seed

Instructions

  1. Slice the cabbage, green pepper, and green onions very thin and place them in a crock or glass jar.
  2. Bring the vinegar, sugar, salt, mustard, turmeric, and celery seed to a boil.
  3. Pour the hot vinegar mixture over the vegetables in the jar.
  4. Let the mixture set overnight.
  5. The slaw will keep for months.
