Ingredients

  • 1/4 cup butter
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 whole shallots, chopped
  • 1/2 cup vermouth or Chablis
  • 1/2 cup beef broth
  • 1/4 teaspoon cornstarch
  • 2 tablespoons tomato sauce
  • 1 teaspoon tarragon
  • 1 teaspoon chopped parsley
  • 1 pound mushrooms, thinly chopped

Instructions

  1. Melt butter in a skillet.
  2. Add chopped mushrooms, salt, and pepper; sauté briefly.
  3. Add chopped shallots and dry white wine; cook until wine is reduced by half, about 10 minutes.
  4. Mix together beef broth and cornstarch.
  5. Add the beef broth mixture to the skillet along with tomato sauce, chopped parsley, and tarragon.
  6. Simmer uncovered until the sauce bubbles slightly.
