Instructions

  1. Add cream of tartar to egg whites and beat until foamy.
  2. Gradually add sugar to the egg whites and beat until stiff peaks form.
  3. Fold the beaten egg white mixture into the cream cheese mixture thoroughly.
  4. Pour the combined mixture into a prepared pan.
  5. Sprinkle with remaining graham cracker crumbs on top.
  6. Bake at 325°F (163°C) for 1 hour and 45 minutes or until the cheesecake is firm.
  7. Turn off the oven, open the door, and leave the cheesecake in the oven for 10 minutes.
  8. Remove from oven and let cool on a rack away from drafts.
