  2. Deep fry the shrimp in hot oil (375° to 400°) until no longer opaque. Drain well.
  3. In 2 tablespoons oil, stir-fry minced ginger, minced scallion, minced red bell pepper, and minced onion until the onion is transparent.
  4. Add ketchup, sugar, and chicken stock to the stir-fried vegetables and bring to a simmer.
  5. Add hot chili or pepper oil to taste.
  6. Turn the heat to high and pour the fried shrimp into the sauce mixture.
  7. Serve immediately while piping hot.
