Impossible Lasagna

Ingredients
- 1/3 cup low-fat cottage cheese ⓘ
- 8 oz ground turkey or beef
- 1 cup tomato sauce ⓘ
- 1 cup skim milk ⓘ
- 1/2 teaspoon salt ⓘ
- 1/8 teaspoon pepper ⓘ
- 1/4 cup Parmesan cheese ⓘ
- 2 teaspoons Italian seasoning
- 9 tablespoons biscuit baking mix ⓘ
- 2 eggs or egg substitute ⓘ
- 3/4 cup shredded low-fat Mozzarella cheese ⓘ
Instructions
- Preheat oven to 400°F.
- Brown ground turkey or beef in a skillet sprayed with cooking spray.
- Spray an 8 x 8-inch baking dish with olive-flavored cooking spray.
- Layer cottage cheese and Parmesan cheese on the bottom of the dish.
- Mix browned meat, Italian seasoning, salt, pepper, tomato sauce, and half of the shredded low-fat Mozzarella cheese.
- Spoon the meat mixture over the cheese layer in the baking dish.
- Prepare the biscuit baking mix with eggs or egg substitute and skim milk to make a batter.
- Pour or layer the biscuit mixture over the meat layer.
- Sprinkle remaining Mozzarella cheese on top.
- Bake in the preheated oven for approximately 30 minutes until golden and bubbly.
