Ingredients

  • 1/3 cup low-fat cottage cheese
  • 8 oz ground turkey or beef
  • 1 cup tomato sauce
  • 1 cup skim milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 9 tablespoons biscuit baking mix
  • 2 eggs or egg substitute
  • 3/4 cup shredded low-fat Mozzarella cheese

Instructions

  1. Preheat oven to 400°F.
  2. Brown ground turkey or beef in a skillet sprayed with cooking spray.
  3. Spray an 8 x 8-inch baking dish with olive-flavored cooking spray.
  4. Layer cottage cheese and Parmesan cheese on the bottom of the dish.
  5. Mix browned meat, Italian seasoning, salt, pepper, tomato sauce, and half of the shredded low-fat Mozzarella cheese.
  6. Spoon the meat mixture over the cheese layer in the baking dish.
  7. Prepare the biscuit baking mix with eggs or egg substitute and skim milk to make a batter.
  8. Pour or layer the biscuit mixture over the meat layer.
  9. Sprinkle remaining Mozzarella cheese on top.
  10. Bake in the preheated oven for approximately 30 minutes until golden and bubbly.
