  • 6 medium red potatoes

  • 3/4 c. chopped onion
  • 2 green onions

  • 1 1/2 tsp. basil
  • 1/4 tsp. oregano
  • 1/8 tsp. thyme
  • fresh ground pepper
  • 3/4 lb. Italian sausage
  • 4 oz. Cheddar, grated
  • sour cream or yogurt

Instructions

  1. Quarter the potatoes and place them in a 2-quart saucepan.
  2. Add enough water to cover the potatoes and 1 teaspoon of salt.
  3. Bring to a boil over high heat, uncovered; then reduce heat to medium and simmer until tender, about 10 to 15 minutes.
  4. Drain the potatoes in a colander.
  5. In a heavy skillet, heat the oil.
  6. Add the potatoes and sauté until browned, stirring occasionally, about 10 minutes.
  7. Add the chopped onion, chopped tomato, basil, oregano, thyme, 1/2 teaspoon salt, and ground pepper.
  8. Sauté until the onions are limp, about 3 to 5 minutes.
  9. Transfer the mixture to a large casserole dish.
  10. Brown the Italian sausage in the skillet and add it to the casserole.
  11. Sprinkle the grated Cheddar cheese on top.
  12. Broil for 3 minutes until the cheese melts.
  13. Top with sour cream or yogurt if desired.
