Ingredients

  • 1 can hominy
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 cup egg noodles
  • 1¾ cups canned tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup grated cheese

Instructions

  1. Brown the ground beef, chopped onion, and chopped green pepper in a skillet.
  2. Add canned tomatoes and hominy to the beef mixture.
  3. Pour the mixture into a buttered casserole dish.
  4. Bake at 350°F for 40 minutes.
  5. Remove from oven and sprinkle grated cheese on top.
  6. Return to oven and bake for an additional 15 minutes until cheese is melted.
