Ingredients

  • 2 lb. beef or chicken, cut into cubes
  • 2 c. onion, chopped
  • 1 or 2 pieces garlic, crushed or 1 tsp. garlic powder
  • 1/2 c. chopped bell pepper
  • 1 large or 2 small carrots, grated
  • 2 Tbsp. raisins
  • lemon juice from 1 to 2 lemons
  • 1/2 tsp. ginger
  • 1 tsp. sugar
  • salt to taste
  • 1 1/2 tsp. curry mix or curry powder
  • pepper to taste

Instructions

  1. Sauté onions, bell pepper, and garlic in 2 tablespoons of margarine or butter.
  2. Set aside the sautéed vegetables.
  3. Brown the meat in a frying pan and transfer it to a large pot.
  4. Make a gravy in the frying pan with drippings, and thicken it with a small amount of flour if desired.
  5. Add all ingredients, including the sautéed vegetables, to the meat and simmer until the meat is done.
  6. Cook rice as directed on the package.
  7. Cut up boiled eggs, tomato, pineapple, banana, raisins, and coconut into small pieces and place in small dishes.
  8. Serve the curry over rice with the side dishes.
