Ingredients

  • 1 Tbsp. Dijon mustard
  • 1 (12 oz.) can corned beef
  • 1 lb. sauerkraut, drained
  • 1 (10 3/4 oz.) can condensed tomato soup
  • 1/4 c. water
  • 3 Tbsp. pickle relish
  • 4 (1 oz.) slices Swiss cheese
  • 4 slices rye bread

Instructions

  1. Lightly grease an 8 or 9-inch square baking dish.
  2. Spread Dijon mustard evenly on one side of each bread slice.
  3. Cut bread into 1/2-inch squares, yielding about 3 1/2 cups.
  4. Scatter bread over the bottom of the prepared dish.
  5. Crumble corned beef over the bread.
  6. Spread drained sauerkraut evenly over the corned beef.
  7. Pour undiluted tomato soup over the sauerkraut.
  8. Mix water and pickle relish, then drizzle over the casserole.
  9. Sprinkle Swiss cheese pieces evenly on top.
  10. Bake in a preheated oven at 375°F (190°C) for about 30 minutes, until bubbly and golden.
