  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons soda
  • 3 teaspoons baking powder
  • 1 teaspoon mace
  • 1/2 teaspoon cloves
  • 1 teaspoon allspice
  • 2 eggs, well beaten

  1. Combine brown sugar, seedless raisins, golden raisins, crushed pineapple, water, margarine, lemon juice, maraschino cherries, and Irish whiskey in a saucepan.
  2. Bring to a boil over medium heat.
  3. Cook for 10 minutes, then reduce heat and simmer for 5 minutes.
  4. Cool the mixture.
  5. In a large mixing bowl, sift together all-purpose flour, soda, baking powder, mace, cloves, and allspice.
  6. Add the cooled raisin mixture and beaten eggs to the dry ingredients.
  7. Beat well until the batter is smooth.
  8. Pour the batter into a greased 10-inch tube pan or two loaf pans.
