- Mix the first five ingredients: flour, sugar, salt, baking powder, and baking soda.
- Cut in the butter until the mixture resembles coarse cornmeal.
- Add raisins, caraway seed, and grated lemon or orange rind if using.
- Stir in the beaten egg and buttermilk just to moisten the mixture.
- Turn the dough onto a well-floured surface and knead 8 to 10 times.
- Roll out to about 1/2-inch thickness.
- Use a biscuit cutter or inverted glass to cut out biscuits.
