Irish Tea Biscuits are hearty, slightly sweet biscuits infused with raisins and optional caraway seed, perfect for breakfast or teatime with a warm beverage or butter.

Ingredients

  • 5 cups flour
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 2 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 cup raisins
  • 1 to 2 tablespoons caraway seed (optional)
  • 1 egg
  • 2 cups buttermilk
  • Grated lemon rind or grated orange rind (optional)

Instructions

  1. Mix the first five ingredients: flour, sugar, salt, baking powder, and baking soda.
  2. Cut in the butter until the mixture resembles coarse cornmeal.
  3. Add raisins, caraway seed, and grated lemon or orange rind if using.
  4. Stir in the beaten egg and buttermilk just to moisten the mixture.
  5. Turn the dough onto a well-floured surface and knead 8 to 10 times.
  6. Roll out to about 1/2-inch thickness.
  7. Use a biscuit cutter or inverted glass to cut out biscuits.
