- Mix together the ground beef, eggs, bread crumbs, milk, chopped onion, crushed oregano, and garlic powder until well combined.
- Pat the meat mixture into a 12 x 10-inch rectangle on foil or waxed paper.
- Arrange the sliced Italian dry salami atop the meat, leaving a small margin on all sides.
- Sprinkle grated mozzarella cheese over the salami slices.
- Starting from the shortest end, roll up the meat jellyroll fashion, lifting the roll with foil.
- Seal the ends and edges by pressing the meat together.
- Sprinkle all surfaces of the outside of the roll evenly and generously with natural meat tenderizer.
- Place the roll seam side down in a shallow baking pan.
- Bake at 350°F (175°C) for about 55 to 60 minutes.
- Top with overlapping cheese slices and continue baking a few minutes until the cheese starts to melt.
