Ingredients

  • 2 lb. lean ground beef
  • 2 eggs
  • 1 c. soft fresh bread crumbs
  • 1/3 c. milk
  • 1/4 c. chopped onion
  • 1 tsp. oregano, crushed
  • 1/4 tsp. garlic powder
  • 1 (3 oz.) pkg. thinly sliced Italian dry salami or pastrami
  • 1 c. grated Mozzarella cheese
  • natural meat tenderizer

Instructions

  1. Mix together the ground beef, eggs, bread crumbs, milk, chopped onion, crushed oregano, and garlic powder until well combined.
  2. Pat the meat mixture into a 12 x 10-inch rectangle on foil or waxed paper.
  3. Arrange the sliced Italian dry salami atop the meat, leaving a small margin on all sides.
  4. Sprinkle grated mozzarella cheese over the salami slices.
  5. Starting from the shortest end, roll up the meat jellyroll fashion, lifting the roll with foil.
  6. Seal the ends and edges by pressing the meat together.
  7. Sprinkle all surfaces of the outside of the roll evenly and generously with natural meat tenderizer.
  8. Place the roll seam side down in a shallow baking pan.
  9. Bake at 350°F (175°C) for about 55 to 60 minutes.
  10. Top with overlapping cheese slices and continue baking a few minutes until the cheese starts to melt.
