Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 lb. pork sausage
  • 3/4 c. oats
  • 1/2 c. tomato sauce
  • 1 egg, beaten
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. oregano
  • 1/2 c. Parmesan cheese
  • 10 oz. frozen chopped spinach, cooked and drained
  • 2 (16 oz.) cans baby tomatoes, drained and sliced
  • 12 oz. grated Mozzarella cheese

Instructions

  1. Combine ground beef, pork sausage, oats, tomato sauce, beaten egg, salt (if using), pepper, oregano, and half of the Parmesan cheese in a bowl.
  2. Pack the meat mixture into the bottom and halfway up the sides of an ungreased 13 x 9-inch baking pan.
  3. Bake at 350°F for 25 minutes; drain excess fat.
  4. Spread cooked and drained spinach over the meat layer.
  5. Arrange drained and sliced baby tomatoes over the spinach.
  6. Sprinkle with remaining Parmesan cheese.
  7. Top with grated Mozzarella cheese.
  8. Bake at 350°F for an additional 15 minutes or until the cheese is golden brown and bubbly.
