Ingredients

  • 1/2 lb ground beef
  • 1 cup chopped onions
  • 1 clove garlic
  • 1 package frozen chopped spinach, thawed
  • 3 cups cooked rice
  • 1 cup mozzarella cheese
  • 4 eggs
  • 3/4 cup milk
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 1 (15 oz) can tomato sauce
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 cup grated Italian cheese
  • 1 tsp. garlic salt

Instructions

  1. Sauté ground beef, chopped onions, and crushed garlic until the meat loses its red color.
  2. Add thawed chopped spinach, cooked rice, and grated Italian cheese; mix well.
  3. In a separate bowl, beat eggs with milk, salt, and pepper.
  4. Add the egg mixture to the rice mixture and combine thoroughly.
  5. Place the mixture in a shallow casserole dish.
  6. Bake at 350°F (175°C) for 30 minutes or until set.
  7. Meanwhile, blend tomato sauce with basil and oregano, and simmer for 5 minutes.
  8. Cut the baked mixture into squares and top with the tomato sauce and grated Italian cheese before serving.
