Jack'S Soup

Ingredients
- roast beef or stew meat ⓘ
- 2 cans mixed vegetables ⓘ
- 1 onion ⓘ
- 2 celery stalks ⓘ
- 3 carrots ⓘ
- 1 large can or 2 small cans of tomatoes ⓘ
- 3-4 cans of tomato sauce ⓘ
- potatoes as many as you like ⓘ
- 1/4 cup vinegar ⓘ
- 1/4 cup worcestershire sauce ⓘ
- 1 tablespoon lemon juice ⓘ
- salt to taste ⓘ
- lemon pepper to taste ⓘ
Instructions
- Brown the roast beef or stew meat in a large stock pot.
- Add chopped onion, celery, and carrots to the pot and cook until vegetables are slightly tender.
- Stir in the canned mixed vegetables, tomatoes, and tomato sauce.
- Add cubed potatoes, vinegar, worcestershire sauce, lemon juice, salt, and lemon pepper.
- Simmer the soup for about 45 minutes to 1 hour, until flavors meld and meat is tender.
