Ingredients

  • roast beef or stew meat
  • 2 cans mixed vegetables
  • 1 onion
  • 2 celery stalks
  • 3 carrots
  • 1 large can or 2 small cans of tomatoes
  • 3-4 cans of tomato sauce
  • potatoes as many as you like
  • 1/4 cup vinegar
  • 1/4 cup worcestershire sauce
  • 1 tablespoon lemon juice
  • salt to taste
  • lemon pepper to taste

Instructions

  1. Brown the roast beef or stew meat in a large stock pot.
  2. Add chopped onion, celery, and carrots to the pot and cook until vegetables are slightly tender.
  3. Stir in the canned mixed vegetables, tomatoes, and tomato sauce.
  4. Add cubed potatoes, vinegar, worcestershire sauce, lemon juice, salt, and lemon pepper.
  5. Simmer the soup for about 45 minutes to 1 hour, until flavors meld and meat is tender.
