Ingredients

  • 1 1/2 c. creamed corn
  • 1 c. yellow cornmeal
  • 1 c. butter, melted
  • 3/4 c. buttermilk
  • 2 onions, chopped
  • 2 eggs, beaten
  • 1/2 tsp. baking soda
  • 1 1/2 c. grated Cheddar
  • 3 jalapeno peppers, diced

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9-inch square baking pan.
  3. Combine creamed corn, cornmeal, melted butter, buttermilk, chopped onions, beaten eggs, and baking soda in a large bowl and mix well.
  4. Pour half of this batter into the prepared pan.
  5. Cover evenly with half the grated Cheddar cheese, diced jalapenos, then the remaining cheese.
  6. Top with the remaining batter.
  7. Bake for 1 hour.
  8. Let cool for 15 minutes.
  9. Cut into squares and serve.
